Quiche for lunch....

What do you make for lunch when you forget to take something out of the freezer....eggs of course :) 
Ingredients:

1 ready to bake tube of crescent rolls
7 eggs
1/4 cup of milk
1/2 cup red pepper chopped
1/2 onion chopped
2 mushrooms chopped
2 Tbsp green onion
1 Tbsp butter
1 tomato thinly sliced
salt and pepper to taste

Directions:
 Roll out your tube of crescent rolls and line a lightly greased baking dish with them. I used a pie dish!!
Chop up your vegetables!! We used onions, peppers and mushrooms because that's what I gad on hand. bacon or breakfast sausage would be good too or ham....possibilities are endless!! Saute your vegetables until soft.
Mix the eggs and milk until well combined. Place the vegetables in the dish then pour the eggs over them.
Slice the tomato's into thin slices and gently place them on top then sprinkle the green onions on top. Bake at 400 degrees for about 30-45 min until no longer jiggly in the center.
Baking right next to the pie.....next time I will make sure I have a bigger dish it spilled over on me so don't make that mistake :)
